Our Mission

Food has been modified to be commodified. Through our research of cultural history, we seek solutions to problems created by the modern food system. We won’t find a single answer, and if we did it would constantly evolve. We aim to provoke you, to start a dialogue, and, simply, to include you on our quest with the warmth of food and drink made by thoughtful hands.

 

It comes down to, of all things, soil. Yes, soil. Soil feeds plants, and plants feed people. It is our job to ensure our restaurants give back to the soil as much as they take. This is achieved through our deliberate and diverse menus, which utilize products from farmers and purveyors whose goal it also is to feed the soil: no chemical fertilizers, no pesticides, and minimal reliance on the use of fossil fuels, which means purchasing as locally as possible. This also means that our menus must be influenced by the soil’s needs…

In order to replenish to the soil what crops have taken from the soil, new crops must be rotated. This means, while we may prefer food made from wheat and corn, and the animals fed on wheat and corn, we must also make use of vegetables like beans and peas and turnips and brassicas that were planted to replenish the soil with the nutrients the wheat and corn removed. We deliberately practice diversity.

Companies who exploit the earth also exploit humanity, which has resulted in massive and catastrophic social injustice worldwide. That isn’t ok. We are sentient beings--we must treat the earth, and the people and things living on it, with respect. By and large, the type of people who feed the soil also nourish humanity, and we don’t mean just with food. Eating is not an innocent act. Our vote is cast at every meal. Fat Cat votes with each meal we prepare for you.
